French Toast with Berries and Cottage Cheese

Simple French Toast is wonderful enough, but add berries and cottage cheese and you’ve got a real treat!

The Bread:

When it comes to french toast, it’s all about the bread. For my family I use a thick and hearty flaxseed Ciabatta or a nice artisan bread for this recipe. For my self I use a Gluten Free Sourdough from New Grains GF Bakery. They offer free shipping on orders over $48. I buy a bunch and freeze it, using it as I beed it.

The Toppings:

I top this simple French toast with creamy cottage cheese fresh berries. You can use any berry you wish or use assorted berries, then drizzle with real maple syrup!

What you need: a good non stick pan and vanilla paste or extract.

    slices
    hearty whole grain or gluten free bread sliced 1/2″ thick
  • 2
    large
    eggs
  • 2
    Tablespoons
    milk or vanilla almond milk
  • 1
    cup
    strawberries or assorted fresh berries of your choice
  • 1/4
    cup
    real maple syrup
  • 1/2
    teaspoon
    vanilla paste or extract
  • 1/4
    cup
    organic full fat cottage cheese
  • 1-2
    Tablespoons
    butter

  1. Whisk together eggs, vanilla and (almond) milk, set aside.

  2. Whisk together vanilla and maple syrup

  3. Heat pan on medium heat till hot, add butter to pan.

  4. When pan is hot and butter is melted, dip bread in egg/almond milk mixture and set in pan.

  5. Cook for about three minutes, until golden brown and then turn and cook other side till golden.

  6. One word of advice… don’t burn it. You can’t put a price on the kind of wisdom I share people.

  7. Spoon organic cottage cheese on one slice of French toast and top with berries.

  8. Drizzle with the syrup/vanilla paste mixture, serve
