What’s in The Chopped Greek Salad with Farro?

Lot’s of good things: farro (of course), chopped romaine, diced cucumbers, sliced tomatoes, fresh mint, sweet red onion and salty feta cheese. 

 

What is Farro?

If you aren’t familiar with farro, let me make an introduction. Farro is an ancient wheat grain that is high in protein, fiber and nutrients like magnesium and iron. Farro is as easy to cook as rice and has a delicious nutty flavor which works beautifully with all the other ingredients in this salad.

The Lemon Vinaigrette:

We keep the dressing on this salad super simple, just olive oil, freshly squeezed lemon juice, honey and a little sea salt and pepper! 

What to Serve it With:

I love this salad served it alongside steak, grilled chicken, or my Hummus Trio with Pita

 

What you need:  a good knife and farro.

A delicious salad that’s great served alone or alongside any protein.

Salad

  • 1/2
    cup
    farro, cooked to package instructions
  • 4
    cups
    chopped romaine
  • 2
    roma tomatoes, sliced
  • 1/4
    cup
    red onion, sliced
  • 1
    cup
    cucumber, peeled and sliced
  • 1/4
    cup
    fresh mint, chopped
  • 1/2
    cup
    crumbled Greek feta

Dressing:

  • 1/3
    cup
    extra virgin olive oil
  • 3
    tablespoons
    freshly squeezed lemon juice
  • 1
    tablespoon
    honey
  • pinch sea salt and freshly ground black pepper

  1. Cook farro to package instructions. When done, pour into a colander and allow to cool.

  2. While farro cools, chop romaine, slice tomatoes, cucumbers and onions, chop mint. Place in a bowl and set aside.

  3. Whisk together olive oil, lemon juice, honey, sea salt and pepper.

  4. Add cooled farro to bowl with salad, drizzle with desired amount of salad dressing and toss. Add feta and toss again. Season with sea salt and pepper if needed. Enjoy!
