Sweet, delicious, ice cold watermelon is a summer staple. And it doesn’t take much to dress it up for a party, family dinner or light meal for one. This is The Organic Kitchen’s Easy Watermelon Salad, and it’s a keeper!

How to Make Easy Watermelon Salad:

Gosh y’all it’s so easy it barely requires an explanation…but I’ll give one anyway because Google demands my post be at least 300 words long. That’s actually true. Simply cut watermelon slices into slices, decorate with a few strawberries and arugula leaves, crumble with a block of feta, and drizzle with balsamic glaze. If you like, you can add on pomegranate seeds, hazelnuts, walnuts, pine nuts, or pistachios!

The Balsamic Glaze:

Balsamic glaze is balsamic vinegar that has been reduced into a thick, delectable syrup. It’s perfect drizzled over fruit, cheeses and even ice cream! Find a quality balsamic glaze here. Please don’t try this recipe with balsamic vinegar, trust me…I am a doctor/recipe creator.

Easy Watermelon Salad

 

Tips and what you need: make sure watermelon is really cold. As always, you need a good knife.

Watermelons wedges sprinkled with a few goodies, made in five minutes! You can divide this salad onto four plates or serve on one large platter.

    thick slices of cold watermelon cut into triangles

    strawberries, cut in half
  • 1

    feta (you can buy soft crumbled but for this one I prefer a block of Greek feta that you crumble by hand)

    cup
    baby arugula
  • 4
    tablespoons
    balsamic glaze
  • add ons optional: your choice of pistachios, walnuts, pine nuts, hazelnuts, and/or pomegranate seeds for garnish

  1. If serving on four plates: Place three watermelon slices on each plate. Sprinkle each with equal amounts of strawberries, cheese and arugula, drizzle with balsamic glaze. Garnish with your choice of options listed above. Serve immediately.

  2. If serving on one platter: arrange watermelon slices on platter, scatter strawberries, cheese and arugula on top, drizzle with balsamic glaze. Garnish with your choice of options listed above. Serve immediately and keep the balsamic glaze handy as people will definitely want to drizzle more on!
